Red beans are a source of protein, carbohydrates and fiber. It also contains B complex vitamins (niacin, riboflavin, folic acid and thiamine) and minerals, such as iron, zinc, potassium and magnesium. This legume also contributes to the treatment of diabetes, since fiber slows the absorption of carbohydrates, allowing better control of glucose (sugar) in the blood. It is also involved in the prevention of cardiovascular diseases, since fiber has a blood cholesterol-lowering effect. We are currently carrying out studies of nutritional value.
