The grains of this type of corn are round, hard and soft to the touch. Our product consists mainly of hard horny starch with only a small part of soft starch in the center of the grain. Hard corn germinates better than other types of corn, particularly in cool, moist soils. Our corn is generally early maturing and dries more quickly once it reaches physiological maturity. It is less subject to insect and mold damage in the field and in storage.
Our customers prefer them for human food and to make cornstarch ("cornstarch"). An important part of the area planted with hard corn is harvested to be consumed as green ears or as animal feed, although specific data in this regard are not yet available. Many commercially grown hard corn have yellowish-orange or creamy-white kernels.
